Pumpkin Pie

The scooped out contents of your Halloween pumpkin need not be wasted.  It can be turned into soups and delicious pumpkin pie.

Pumpkin pie is a sweet desert, which has its origins in North America and is especially associated with Thanksgiving and Christmas.

Pumpkins are a Halloween favourite

Late Autumn is the time when pumpkins ripen and along with other garden produce are often seen decorating our displays for harvest festivals and of course, lend themselves easily to the carving of Halloween lanterns.

The firm, fibrous flesh is cut into pieces and roasted to bring out the flavour.  This is then combined with cream and other ingredients such as ginger, nutmeg, cinnamon and clove and baked in a pastry case.

We found this useful Pumpkin Pie video from VideoJug (see below), which gives clear and concise instruction on how to make a tasty pumpkin pie.

This would be a great treat to make for a Halloween party.

It is worth pointing out that in the video, they use a flan tin about 30cm in diameter and around 4 cm deep and the quantity of filling they make is actually greater than needed (they seem to have plenty left over).  Simply use a deeper flan tin, make two pies or cut the filling ingredients by about two thirds.

They also use a ready made short crust pastry base but it is really easy and more economical to make your own.  By using self rising flour, margarine and sugar you will achieve a richer, more crumbly sweet pastry, better suited to sweets and puddings.

Sweet Pastry base:

200g self raising flour
100g baking margarine
2 tablespoons sugar

Combine ingredients in a mixing bowl and gently rub fat into the flour until it resembles fine breadcrumbs.

Add just enough water (a little at a time) and mix until a firm smooth dough is formed.

Roll out on a floured surface and line your pie tin.

* 850 g pumpkin, chopped
* 350 ml cream
* 190 g brown sugar
* Half tsp salt
* 3 eggs and 1 egg yolk
* 1 tsp cinnamon
* quarter tsp nutmeg
* quarter tsp allspice
* the zest of 1 lemon
* 1 short-crust pastry base , ready made
* 1 roasting tin
* 1 spoon
* 1 fork
* 1 pie tin
* 1 jug
* hand blender
* aluminium foil
* baking parchment
* about 500g of dried beans to weigh down the crust
