{"id":845,"date":"2011-09-17T14:00:08","date_gmt":"2011-09-17T13:00:08","guid":{"rendered":"http:\/\/foodonabudget.com\/content1a\/?p=845"},"modified":"2011-09-17T15:44:56","modified_gmt":"2011-09-17T14:44:56","slug":"cucumber-pickle","status":"publish","type":"post","link":"https:\/\/foodonabudget.com\/content1a\/2011\/09\/cucumber-pickle\/","title":{"rendered":"Cucumber pickle"},"content":{"rendered":"<p>This lovely European pickle is a great way to use up a glut of cucumbers.<\/p>\n<p>Do not panic at the amount of salt you see in the recipe, the salt is used to draw moisture from the cucumber and you will be rinsing this away before making the pickle.<\/p>\n<p>The art to this pickle is in the preparation, to get as much moisture out of the cucumber as possible, if you don&#8217;t, the cucumbers can end up a bit soft and slimy.\u00a0 So do take time to slice the cucumber finely and layer with the onion, sprinkling each layer with salt.<\/p>\n<p>Once matured, after about 1 month, this pickle will make a great accompaniment to cheeses but also has enough &#8220;bite&#8221; to put with cold meats.<\/p>\n<p><strong>You will need;<\/strong><\/p>\n<ul>\n<li>1 large glass bowl\n<p><figure id=\"attachment_847\" aria-describedby=\"caption-attachment-847\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"http:\/\/foodonabudget.com\/content1a\/wp-content\/uploads\/2011\/09\/bottled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-847\" title=\"Cucumber pickle\" src=\"http:\/\/foodonabudget.com\/content1a\/wp-content\/uploads\/2011\/09\/bottled-300x249.jpg\" alt=\"Cucumber pickle\" width=\"300\" height=\"249\" srcset=\"https:\/\/foodonabudget.com\/content1a\/wp-content\/uploads\/2011\/09\/bottled-300x249.jpg 300w, https:\/\/foodonabudget.com\/content1a\/wp-content\/uploads\/2011\/09\/bottled-150x124.jpg 150w, https:\/\/foodonabudget.com\/content1a\/wp-content\/uploads\/2011\/09\/bottled-120x100.jpg 120w, https:\/\/foodonabudget.com\/content1a\/wp-content\/uploads\/2011\/09\/bottled.jpg 600w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-847\" class=\"wp-caption-text\">A great way to use up those cucumbers<\/figcaption><\/figure><\/li>\n<li>1 plate (that fits inside the bowl about half way)<\/li>\n<li>1 heavier object to press down the plate (we used another smaller bowl filled with water)<\/li>\n<li>large pan or jam making pan.<\/li>\n<li>Slotted spoon, sieve or strainer.<\/li>\n<li>Approx 4 x 1\\2 Kg jars with screw tops.<\/li>\n<\/ul>\n<h2>Ingredients<\/h2>\n<p>4 large cucumbers<br \/>\n6 -8 Small shallots or 3 medium onions (shallots tend to have a little more depth of flavour)<br \/>\n50g of salt<\/p>\n<h2>For the syrup:<\/h2>\n<p>550ml of white wine or cider vinegar (Do not use normal malt vinegar as this does not have enough acid content for pickling).<br \/>\n450g of soft brown sugar<br \/>\n1 tablespoon of mustard seed<br \/>\n1 tablespoon of celery or dill seed<br \/>\n\u00bd teaspoon of ground cloves<br \/>\n\u00bd teaspoon of ground turmeric<\/p>\n<h2>How to make the pickle<\/h2>\n<p>Wash the cucumber (leave on the green skin) and peel the onions or shallots.\u00a0 Slice them both as thin as you can.<\/p>\n<p>Put a layer of cucumbers and onions in the bowl and add a good sprinkling of salt, repeat this process until you have used up all your cucumber and onion.<\/p>\n<p>Place a clean plate on top and weigh down to expel as much of the moisture as possible.\u00a0 Leave this to stand for a minimum of four hours or overnight.<\/p>\n<p>There should now be quite a quantity of liquid in the bowl, pour this off and rinse the cucumber and onion mixture in cold water a couple of times to get rid of the salt.\u00a0 Make sure you pour off as much water as possible after rinsing.<\/p>\n<p>Sterilise your jars by washing them in soapy water and rinsing in clean warm water.
